A liposome is a microscopic vesicle made of fat molecules called phospholipids. Its structure resembles a cell membrane: a double-layered shell with a protected core for the ingredient it carries. The "nano" prefix means these vesicles are produced at nanometre scale — a billionth of a metre.
In food technology, liposomal encapsulation is a method used to protect delicate ingredients from light, heat and oxygen, to mask sharp flavours, and to keep ingredients evenly distributed in a product. It has been applied for decades across industries from cosmetics to food.
